味噌(みそ),typically made with soya, is a thick paste used for sauces and spreads. Different varieties of miso have been described as salty, sweet, earthy, fruity, and savory, and there is an extremely wide variety of miso available.
Miso soup is versatile and can be very easy to prepare.
Mushroom, tofu miso soup
Ingredients
4 fresh chestnut/shitaki mushrooms, sliced
100g tofu chopped into little cubes
2 spring onions, fine chopped
1 pack miso paste
Preparation
Bring water to boil in a saucepan.
Add mushrooms and tofu.
Stir in miso paste.
Add your favourite leafy vegetables.(pakoi, chinese leaf, spinach etc)
Simmer for 3-4 minutes.
Add spring onions and servce.
